Recipe: Cajun-spiced Chicken With Creamy Tomato Sauce

Today on Cooking at Home I'll be making a Cajun inspired meal with Cajun spice rubbed chicken breasts served with a creamy tomato sauce made with celery, peppers and onions.

Ingredients:
12-ounce bag egg noodles
Vegetable oil
1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup deseeded chopped green pepper
1 clove garlic
1 cup tomato sauce
1/2 cup heavy cream
Cajun spice rub
Two large, boneless and skinless chicken breasts

Procedure:
It might be more traditional to serve something like this with rice but we'll use egg noodles.

Get a large pot of water going for eventually cooking the egg noodles and then use a large saute pan, with a splash of vegetable oil, to saute about 1/2 cup each of thinly chopped onion, celery and deseeded green pepper.

In Cajun cooking, the combination of celery, peppers and onions is known as "the trinity" and you want to cook that along until it softens up a bit.

Then add 1 minced clove of garlic and cook that along for a minute. Then add 1 cup of plain tomato sauce and a 1/2 cup of heavy cream, add a little sprinkling of the Cajun spice rub. Stir that together, heat it all the way through and turn the heat off.

At this point, add one 12-ounce bag of egg noodles to the boiling water and get those going, they'll take just about 8 minutes to cook.

While that's happening, cut two large boneless, skinless chicken breasts into strips and generously season those with the Cajun spice rub.

Then saute the strips in vegetable oil in another large saute pan, on medium high heat.

Once the chicken is cooked through, add the cream sauce to the chicken pan and warm that through.

Drain the pasta and it is time to eat.
