SERVES:
6-8 as an appetizer

INGREDIENTS:

1 pound lean ground beef

2-3 Tbs vegetable oil
1/2 cup diced onion
1/2 cup diced celery
1 large clove garlic, minced

scant 1/8th tsp ground cayenne pepper
1/2 tsp dried thyme
1 tsp ground cumin
1 tsp chili powder
1/3 cup barbecue sauce
one 15-ounce can diced tomatoes (petite dice is nice)

salt to taste

6 - 8 slider rolls, sliced

PROCEDURE:

Add a splash of vegetable oil to a large heavy bottomed pot and saute 1/2 cup diced onion, 1/2 cup diced celery and 1 large minced clove of garlic to soften.

Cook that along on medium to medium high heat and, when you're happy with it, add 1 pound of ground beef and break that up and cook it along to brown up.

If you're using lean ground beef, you might need to add another splash of vegetable oil.

Once the meat has browned up, add a little sprinkling of ground cayenne pepper, add 1/2 tsp dried thyme, add 1 tsp ground cumin and 1 tsp chili powder, add 1/3 cup barbecue sauce, one 15-ounce can diced tomatoes and a shake of Worcestershire sauce and bring it up to a simmer.

Season that with salt to taste and serve it up in individual bowls over the top of sliced slider rolls.

HINTS:

You'll need to serve this in bowls, just like you would chili, with forks.

This recipe is easy to double.
