Zagat Restaurants: Warm Up With Spicy Indo-Latino Fusion At Vermilion

As New Yorkers bundle up for the last few weeks of the winter, the Zagat Restaurant Guide says At Vermilion can help keep them hot, hot, hot. NY1’s Michelle Park filed the following report.

Surveyors say the stylish Chicago import in Midtown East serves up “bold” and “spicy” Indo-Latin fusion cuisine in a space that sports a “minimalist” look with lots of white, metal and black-and-white photography.

The menu features memorable medleys like duck vindaloo arepas, Portuguese lobster stewed with coconut rice, and the tandoori skirt steak.

"The skirt steak is one of our best examples of Indian-Latin fusion,” says Executive Chef Maneet Chauhan. “Beef is not consumed widely in India, and skirt steak is so prevalent in South American countries. We've taken the skirt steak and put Indian marinade to it and then applied an Indian form of cooking!"

To make the marinade for the dish, Chauhan starts with plain yogurt.

"To that, we add a ginger garlic paste, which is equal parts ginger and garlic blended with a little bit of water,” Chauhan says.

Add salt, chili powder and tandoori masala spice blend to the mixture, coat the steak and let it marinate overnight.
Then, the chef skewers the steak and puts it into a traditional Indian oven known as the tandoor. But Chauhan says you don’t need to build a whole new oven to enjoy the spicy steak at home.

"Now with the weather getting warmer, fingers crossed, you can definitely do it on the grill,” he says. “And if the weather is still bad, you can definitely put it in the oven and cook it in the oven."

To wash that all down, they also feature some spicy spirits at the restaurant. The pear lime chili cocktail is adorned with a bright green jalapeno and the pani puri margarita with ginger, jalapeno and red chili powder.

Out of a possible 30, At Vermilion receives a 18 for food, 19 for décor, and a 17 for service. Dinner here will cost around $55.
