Recipe: Oven Roasted Chicken Drumsticks With Onions, Cauliflower

Today on cooking at home I'll be using the oven to make a rustic and inexpensive meal with chicken drumsticks and roasted red onion and cauliflower. For an optional depth of flavor, adding capers, golden raisins, spicy pepperoncini peppers and fresh parsley to the vegetables and then serving everything over the top of marinara sauce.
1 medium-size head of cauliflower
1 medium-size red onion
Olive oil, salt, pepper
Preheat the oven to 400 degrees and place a heavy bottomed baking tray into the oven at the same time to heat up.
Next, cut the cauliflower into bite-size florets and add the rough-chopped red onion and a generous amount of olive oil. Season with salt and pepper to taste and toss to coat.
Pull the hot tray out of the oven and add a splash of olive oil. Add the cauliflower and spread it out in a single layer and place the tray back into the oven.
Then, season the chicken drumsticks with salt and pepper and olive oil in a baking dish and place that into the oven as well.
Cooking both of these dishes for just about an hour. While the vegetables are still hot, add them to a large mixing bowl with a handful of golden raisins, some sliced pepperoncini, chopped parsley and a couple of Tbs of well-drained capers. Toss to combine.
Spoon some warmed marinara sauce onto a plate, top it with some of the roasted vegetables and chicken and serve.
