Recipe: Winter Fruit Salad

Today's recipe is for a refreshing, simple winter fruit salad with oranges, grapefruits, apples and bananas, served with toasted walnuts and dried cranberries and a dollop of yogurt.

Ingredients:
Oranges
Grapefruit
Apples
Bananas
Toasted walnuts
Dried cranberries
1 - 2 tsp of vegetable oil
Orange juice (optional)
Yogurt (optional)

Procedure:
Plan ahead and toast the walnuts in 1 - 2 tsp of vegetable oil in a pan on the stove top and then take them out of the pan to cool.

Cut the citrus ahead of time and keep it cold in the fridge, but don't cut the apples and bananas until just before assembling the salad.

Cut the tops and bottoms off of the oranges and use the knife to cut the skin off of the orange from top to bottom. Then cut each orange in half crosswise and cut it into bite-size pieces, tossing them into a mixing bowl. Do the same thing with a lesser amount of grapefruit, removing any seeds.

A little fresh-squeezed orange juice, or even some store-bought orange juice, can be added to the bowl, along with a handful of dried cranberries. Toss them around to start absorbing some of the juice.

When it comes time to eat, cut the apples and slice the bananas, gently toss them together and then serve it up in individual bowls with an optional dollop of yogurt and the toasted walnuts right on top.
