Recipe: Peanut Butter Chocolate Chip Banana Bread

Today's recipe for homemade banana bread combines a couple of super-ripe bananas with milk chocolate chips and smooth peanut butter in place of the usual butter. These flavors all have a natural affinity for each other, and you can use any smooth peanut butter you like.

Ingredients:
1/2 cup smooth peanut butter
2 medium-size ripe bananas
1 cup light brown sugar
2 large eggs
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 cup milk chocolate chips
1/3 cup milk
Butter

Procedure:
Preheat the oven to 350 degrees and butter and lightly flour one 9x5-inch loaf pan.

Add one lightly packed cup of light brown sugar to a large mixing bowl with a scant half-cup of smooth peanut butter and use a rubber spatula to cream those together. Then add two large eggs and use a fork to mash the ripe bananas into the mix.

Next, use another mixing bowl to combine the all-purpose flour, baking soda, salt and milk chocolate chips and toss to combine.

Alternately, add the dry ingredients to the peanut butter and banana mix with 1/3 cup milk and then transfer that to the prepared loaf pan and place it onto the center rack of the preheated oven.

It will take just about one hour to bake. Use a toothpick to check it for doneness and then let it cool down for a few minutes in the pan. Carefully turn it out onto a cooling rack to finish cooling down.
