Recipe: Hawaiian-Style Fried Rice

Today on cooking at home I'll be using precooked, cooled white rice to make Hawaiian-style fried rice with pineapple and smoked ham, although canned "Spam" might be a more typical Hawaiian addition.

Ingredients:
3-4 cups precooked white rice, cooled
1 medium size onion, thinly chopped
Vegetable oil
1 Tbs minced garlic
1 Tbs minced, peeled ginger
1 - 1 1/2 cups diced smoked ham
1 cup drained canned pineapple chunks
1/2 cup chopped green onion
Soy sauce
Handful fresh cilantro

Procedure:
If you don’t have leftover rice you need to plan ahead to cook it and cool it. Fresh pineapple can also be substituted for canned pineapple.

Use a large heavy bottomed saute pan, if you don't have a wok, to saute 1 medium size, thinly chopped onion, in a little vegetable oil, to soften.

At that point add 1 generous Tbs each of minced garlic and minced peeled fresh ginger and cook that along a minute.

Then add 1 - 1 1/2 cups diced smoked ham and cook that along for 1-2 minutes.

Add 1 cup or so of well drained canned pineapple chunks and 1/2 cup chopped green onion and stir that in.

Next, add the rice and cook until warmed through.

Then season with soy sauce to taste, add a good handful of fresh chopped cilantro and it's good to go.
