Recipe: Three Apple Cake

Today's recipe is for what I call a "Three Apple Cake," because it has three different apple products -- apples, unsweetened applesauce and apple cider. The cool part is, the unsweetened applesauce can replace the typical oil one finds in a recipe like this.

Ingredients:
4 cups of diced apples
3 cups all-purpose flour
1 packed cup light brown sugar
1 tsp kosher salt (or 1/2 tsp table salt)
1 tsp baking soda
1 tsp ground cinnamon
1 cup unsweetened applesauce
3 large eggs
1 tsp vanilla
1/2 cup apple cider

Procedure:
Preheat the oven to 350 degrees and measure out all of the dry and wet ingredients before peeling and dicing the apples. There should be 4 cups of 1/2-inch diced apple total.

Use a large mixing bowl to combine the flour, light brown sugar, salt, baking soda and ground cinnamon, mix that up and break the brown sugar up a bit.

Then add the unsweetened applesauce, eggs, vanilla and apple cider. Mix that together, fold in the diced apples, transfer it to a buttered 9 x 13-inch baking dish and place it onto the center rack of the preheated oven.

That is going to take just about 40 minutes to bake. Spin the baking dish halfway around halfway though.

Use a toothpick to check it for doneness.
