Zagat editor Maureen Giannone headed to TriBeCa to check out famed chef Michael White's new retro-inspired joint, The Butterfly, and filed this report.
The Altamarea Group just opened the doors to its sixth New York City restaurant, The Butterfly, a new cocktail bar and supper club in TriBeCa.
"If you look at all of our restaurants, they're all very unique and different," says chef and owner Michael White. "It's all very important to me and my partner and the whole team that the restaurants have their own identities. Here at The Butterfly we're really focusing on cocktails and then secondary is the food."
With offerings like the house martini, grasshopper and patty melt, this food and beverage program definitely gives a nod to the throwback vibe that is evident in the restaurant's mid-century design.
"I really wanted people to be transported when they walked in, to put them in the frame of mind to really appreciate these drinks even more," says Eben Freeman, who designed The Butterfly's beverage program. "The glassware they come with, the presentation, even the whole room is part of that. I'm finding that people are already tasting the drinks and thinking about them before they even order."
The throwback cocktails on the list include a lot of familiar selections, presented with modern flourishes.
"There are a lot of great drinks from my father's generation," Freeman says. "There was a lot of great drinking culture during that time. So I wanted to revisit all of those and do something, I'm not going to say twists on them - but somehow add another element while keeping true to the same drink."
Those who come to The Butterfly may feel like they have stepped back in time, which is why this spot is set to become a timeless destination in Lower Manhattan.
