Turkey pan gravy
• fond from roasting pan
• 3 tbsp all purpose flour
• 1/4 cup dry white wine
• 2 cups fond blanc
1. Bring contents of roasting pan back to a simmer.
2. Dust with flour, cook flour to for two to three minutes to eliminate starchy flavor.
3. Deglaze with white wine, reduce to au sec.
4. Add warm, reduced stock to just cover vegetables.
5. Stir to clean mirepoix; strain.
6. Season to taste.
