Makes 8 cups croutons
8 cups cubed bread
1 heaping Tbs finely minced garlic
1/3 - 1/2 cup grated Parmesan cheese
black pepper to taste
1/3 cup olive oil
Preheat the oven to 375 degrees, and cut about 8 cups of 2- to 3-day-old bread into 1/2- to 3/4-inch cubes.
Add those to a large mixing bowl with 1 heaping tablespoon of finely minced, peeled garlic. Then add about 1/3 - 1/2 cup grated Parmesan cheese, a good crack of black pepper and 1/3 cup olive oil. Toss to combine.
Transfer that to 2 baking trays and spread it out into a single layer. Pop those into the preheated 375 degree oven. Toss them around a bit as they're toasting, and switch the trays from top to bottom partway through.
They're going to take around 20 minutes to crisp up. Let them cool down to room temperature and then store them in a lidded plastic container or plastic bag. Serve over any salad.
This works with any bread, although lighter sandwich bread may take less olive oil and less time to bake.
