Today's recipe is for homemade buttermilk biscuits with smoked ham and cheddar cheese soft scrambled eggs.
4 cups all-purpose flour
2 Tbs baking powder
2 Tbs sugar
1 tsp salt
6 Tbs cubed, cold, unsalted butter
1 1/2 cups buttermilk
splash of vegetable oil
4 ounces diced smoked deli ham
8 large eggs
1/4 cup milk
1 cup grated cheddar cheese
1/4 cup chopped green onion
Preheat the oven to 400 degrees and use a large mixing bowl to combine 4 cups all-purpose flour with 2 Tbs baking powder, 2 Tbs sugar and 1 tsp salt, and mix that together.
Then, add 6 Tbs cubed, cold, unsalted butter, and use a pastry cutter to incorporate that.
Then, add 1 1/2 cups buttermilk, and gently mix everything together until it just forms a ball.
Gently roll that out on a floured surface into a 1 1/2-inch thick rectangle and cut it into 12 equal size squares.
Place those onto a baking tray and into the preheated oven. They'll take just about 20 minutes to bake.
Take the biscuits out of the oven when they're done, and add a splash of vegetable oil to a large heavy bottomed pan on medium to medium high heat, and saute about 4 ounces of diced smoked deli ham to crisp up a bit.
Add a little more oil, turn the heat way down and add eight large eggs beaten with 1/4 cup milk, and cook those along and stir them occasionally as they're cooking.
Once they're almost done, add about 1 cup grated cheddar cheese and 1/4 cup chopped green onion and continue to cook until the cheese has melted in and the eggs are cooked through.
