Makes one 9x13-inch baking dish

INGREDIENTS:

one 9 x 13-inch baking dish (see hints below)
butter for greasing baking dish

for the streusel:
1 cup light brown sugar
1/3 cup all-purpose flour
1/3 cup chopped pecans
1 tsp ground cinnamon
4 Tbs cold unsalted butter, cut into cubes

for the cake:
3 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp ground cinnamon
1/2 tsp salt

2 sticks room temperature unsalted butter
8 ounces cream cheese
1 cup light brown sugar
2 large eggs
1 tsp vanilla

1/2 cup milk

2 cups peeled diced apple

PROCEDURE:

Preheat the oven to 350 degrees and also butter one 9 x 13-inch baking dish.

Make the streusel by combining a packed 1 cup of light brown sugar with 1/3 cup all-purpose flour, 1/3 cup chopped pecans, 1 tsp ground cinnamon and 4 Tbs of cubed, cold unsalted butter and use your fingers to completely incorporate the butter.

Next, use another mixing bowl to combine 3 cups all-purpose flour with 1 tsp baking powder, 1 tsp baking soda, 1/2 tsp ground cinnamon and 1/2 tsp salt and mix to combine.

Use an electric mixer to cream one 8-ounce package of room temperature cream cheese with 2 sticks room temperature unsalted butter and 1 cup light brown sugar.

And then add 1 tsp vanilla extract and 2 large eggs, one at a time.

Then slowly and alternately add the flour mixture with 1/2 cup milk.

All that's left is to peel and finely dice 2 cups of apples and use a rubber spatula to incorporate that into the dough.

Transfer it to the prepared pan, top it with the streusel and place the pan into the preheated 350 degree oven.

That will take between 45 and 50 minutes to bake....use a toothpick to check it for doneness.
Because of the moisture in the apples, it's better bake a little longer than not enough.

HINTS:

Cut the recipe in half and bake in a butter 8 x 8-inch baking dish instead.
Be aware that this will take less time bake if you do.

Because of the cream cheese, this cake tends to have a dense texture but the apples keep it nice and moist.
