Recipe: Hot Italian Sausage Sliders

Makes 12 sliders

INGREDIENTS:

12 slider rolls
3 large hot Italian sausage patties
1 medium onion, peeled, halved and thinly sliced
1/2 medium red pepper, deseeded and thinly sliced
1/2 cup thinly sliced fresh fennel (see hints below)
2-3 Tbs olive oil for sauteing vegetables
approx. 1 cup jarred marinara sauce
3 - 6 pieces deli sliced mozzarella cheese (see hints below)

PROCEDURE:

Add a splash of olive oil to a large saute pan on medium heat and saute 1 medium halved and thinly sliced onion, 1/2 medium deseeded and thinly sliced red pepper and about 1/2 cup thinly sliced fennel to soften.

Give the vegetables a 5 minute head start and then saute the 3 sausage patties to another large saute pan or cast iron skillet and brown them up and cook through and turn the heat off.

Once the vegetables are nice and soft, add about 1 cup of your favorite marinara sauce and stir that in and let it warm through and turn the heat off.

Divide the bottom and top halves of the slider rolls onto a baking tray (cut side up) and then top each top half with a quartered slice of mozzarella cheese and place the tray underneath the broiler to toast the bread and melt the cheese.

You may need to spin the tray a little bit to get the bread to toast evenly underneath the broiler and, once you're happy with that, cut the sausage patties into quarters and assemble each individual slider.

HINTS:

If you're not using the fennel, just use the whole deseeded and thinly sliced pepper instead.

Put a slice of cheese on all of the slider roll surfaces instead of just the top halves if you like.
