INGREDIENTS:
Block of feta cheese
Raw shrimp
Bacon
Olive oil
Garlic clove
12 to 16 oz. of spinach
Lemon juice

PROCEDURE:
You need to buy a block of feta cheese for this, not crumbled feta cheese, and then carefully cut one 1/2-inch thick by 1 to 1 1/2-inch long rectangle for each shrimp.

Next, butterfly each large raw shrimp and then place one piece of feta cheese inside of each shrimp and gently but firmly fold that together.

Then carefully wrap each shrimp with 1/2 slice of regular cut bacon and then push it onto the metal skewer, trying to secure the ends of the bacon as you go.

Place the finished shrimp skewers onto a large baking tray and turn the oven onto the broiler setting and then place the tray underneath the broiler.

At the same time, add a splash of olive oil to a large pan on the stovetop, on medium to medium high heat, and saute a large minced clove of garlic for about 30 seconds.

Then add 12 to 16 ounces of spinach, a bit at a time, letting it wilt down as you go.

Keep your eye on the shrimp and, depending on the size, they're going to take about 10 minutes total.

About halfway through you'll want to flip the skewers over and pop the tray back underneath the broiler to finish cooking through.

Serve them up over the top of the spinach with a squeeze of lemon juice.
