6 small, soft corn tortillas
1 can refried beans
2 tbsp vegetable oil
4 large eggs
1 diced avocado
1 cup grated cheese
1 cup tomato salsa
chopped fresh cilantro
Using three tortillas per serving, spread a helping of refried beans onto two of the three tortillas.
Sprinkle all three tortillas with grated cheese and place them in a preheated 350 degree oven until the cheese is melted and the refried beans are warmed up.
Next, prepare to fry the eggs by splashing some vegetable oil on a large, heavy bottomed non-stick pan set to medium heat.
Crack and add the eggs to the pan, allowing two eggs per serving. Try to keep the eggs separate, and gently flip them until fried to your liking.
Prepare each serving by placing the first refried bean tortilla on a plate, adding one fried egg and a little tomato salsa.
Then, top with the second refried bean tortilla, adding another fried egg and a little more salsa.
Finally, top it all off with the third cheese tortilla, more salsa, diced avocado, chopped fresh cilantro, and fresh lime juice.
