Today's recipe takes advantage of strawberry and banana's natural affinity for each other to make a strawberry banana bread with chocolate chips.
1 stick unsalted butter
1 cup light brown sugar
1 cup of mashed, ripe banana
2 large eggs
1/3 cup milk
2 1/3 cups all-purpose flour
1/2 tsp kosher salt
1 1/2 tsp baking soda
1 cup diced strawberries
1 cup chocolate chips
Preheat the oven to 350 degrees and butter and lightly flour one 9 x 5-inch loaf pan. Use a large mixing bowl to cream the stick of butter with the light brown sugar.
Then, add the mashed, ripe banana and eggs and continue to mix until everything is well combined.
Add the milk, stir it in and then add the all-purpose flour, kosher salt and baking soda and fold that together.
Lastly, add the diced strawberries and chocolate chips and fold those together until they are just combined.
Transfer the mixture to the prepared loaf pan and place it onto the center rack of the preheated oven.
It will take an hour or even a little bit more to bake and it is a good idea to rotate the pan halfway through.
Let it cool down in the pan for 10 minutes or so and then carefully turn it out onto a cooling rack to finish cooling down.
