A new Williamsburg restaurant is putting a New York spin on the Southern favorite chicken and waffles. Zagat editor Kelly Dobkin filed the following report for NY1.

Owners John Seymour of Pop's of Brooklyn and Sam Saleh of Williamsburg's Organic Planet have partnered up to open an American eatery called "Sweet Chick" that offers playful takes on Southern-inspired fare.

"We didn’t want to just do chicken and waffles," Seymour says. "We wanted to do the best chicken and waffles and also offer a place where you can come seven nights a week and get other types of things, non-fried foods and stuff like that."

The space features a picnic-style table in the center, and homey decor throughout, accented, of course, with some uniquely Brooklyn touches.

"My favorite design details for the space would have to be the door wainscoting that we got," Seymour says. "It’s really just going out and finding stuff and putting it all together organically, keeping that Brooklyn vibe. We have Biggie’s quote behind the bar. Really, just trying to keep it local."

In addition to serving up a variety of takes on the classic chicken and waffles, including a vegetarian version, chef Randy Reppel puts a new twist on old favorites like the sloppy Joe.

"What makes us different from the regular guys is we actually do a variety of the waffles," Reppel says. "That’s kind of like our unique spin to it, trying to keep it as organic as possible and constantly evolving the different waffle dishes. We have a great pork dish that I’m actually quite proud of as well, comes with sweet potato, hominy, brussel sprouts and raisins. I think what also makes us different is, we’re actually doing a duck sloppy Joe with crunchy skin and sliced pickles."

The cocktail program features some unexpected ingredients, such as Welch’s Grape Soda and a custom-made Arnold Palmer soda from Brooklyn Soda Works.

"It's a couple of plays on some modern culture," Seymour says. "Our take on the sloe gin fizz is called Purple Drank, so we add a little Welch’s Grape Soda to that. We really took the time to think about what this neighborhood needs and what we think would work here, and along with the chicken and waffles, it’s just a friendly staff, great service and an awesome bar."
