Edible: Momofuku Milk Bar Taps Into Soft, Frozen Treats
Ice cream season has certain come early and one local shop in Brooklyn is making fresh soft serve that's frozen on the spot. Rachel Wharton of Edible Manhattan magazine filed the following report.

The now famous soft serve at Momofuku Milk Bar in Williamsburg, Brooklyn is part of a city mini-chain of dessert shops run by pastry chef Christina Tosi.
Momofuku Milk Bar is sort of like our take on a modern day Dairy Queen meets a really kooky bakery," says Tosi.
In the kitchen hidden behind the Brooklyn store Tosi prepares soft serve in flavors like pretzel, salty pistachio, banana split and cereal milk. The latter is made by soaking cornflakes in milk and is the best-seller hands down. It's always on tap.
"The masses will come if you take it off the menu, they will come to your house late at night," jokes Tosi.
Yet there are other reasons Tosi's ice cream is so addictive. The milky mix in soft serve is literally frozen fresh to order, right as it's swirled into your cup.
"So you get it at just the right melty temperature, so you eat it quick and you enjoy it. And you get more of that pure sense of ice cream," says Tosi.
And while most soft serve is made from commercial mixes, Tosi's milk is so rich she doesn’t need to add heavy cream or eggs.
"I really love using a farm-fresh organic milk from a nearby dairy. One so we can support them, but also because farm-fresh, organic milk is typically pasteurized but not homogenized, so you get this great, creamy flavor. You get something very much like what milk is supposed to taste like, and less like what you're used to drinking," notes Tosi.
The soft serve machine, on the other hand, should be familiar. Their fancy Electro-Freeze machine is the same one used by Mister Softee trucks.
"And we were just like walking around the East Village, and there's always a Mister Softee truck driving around and we literally hi-jacked one or two of them. Like 'Dude, we need to come into your truck. I need to see your soft-serve machine,'" recalls Tosi.
